Delicious and Gluten Free!

As a former New Yorker, I always crave the amazing buffalo wing sauce on the east coast and the range of options restaurants pump out using all things buffalo wings – Buffalo Chicken Subs, Buffalo Chicken Wing Dip, Buffalo Chicken Soup, the list goes on and on.
Last night, I decided to recreate one of my favorite Buffalo Chicken Recipes, Buffalo Chicken Nachos! These nachos are super easy to make, gluten free and healthier than fried buffalo tenders and blue cheese. They aren’t super spicy so even my kids got in on some of the action.

Blazing Buffalo Chicken Nachos
Gluten-Free
Prep Time: 20 minutes
Total Time: 35 minutes
Ingredients:
- 32 ounces of Chicken Stock or Broth (one box)
- One package of skinless, boneless chicken breasts (around 1.5lbs)
- 1.5 cups of Buffalo Wing Sauce
- ½ Cup of Water
- One bag of corn tortilla chips
- 1.5 cups of shredded Cheddar cheese (or 3 cups if you don’t use Monterey Jack)
- 1.5 Cups of shredded Monterey Jack cheese
- 1/3 Cup of Blue Cheese Crumbles
- 3 Stalks of Celery
- 6 Scallions
- Blue Cheese Dressing (to taste)
Directions:
Step 1: Preheat oven to 475
Step 2: Boil chicken breasts in chicken stock for 15 minutes or until cooked through

Step 3: Run chicken breasts under cold water and shred
Step 3: In saucepan, bring Buffalo Chicken Sauce and Water to a simmer.
Step 4: Add shredded chicken to buffalo sauce and heat on low until heated through (around 5 minutes)
Step 5: Layer parchment paper or foil on a cookie sheet and lay tortilla chips across. Layer with chicken and top with cheese.

Step 6: Cook for 12-15 minutes (check after 10).
Step 7: Garnish with celery, blue cheese crumbles, scallions and drizzle blue cheese dressing over chips or serve on the side! You can also add sliced olives or jalapenos to taste.

Eat warm and eat quickly because once your friends and family get a bit this dish will be gone in no time!
